Recipe of the Week
Cinnamon Rolls (from Ashley Graber)
7 to 7 1/2 c. flour
2 pkg. dry yeast
2 c. milk
1/2 c. sugar
1/2 c. shortening
2 tsp. salt
2 eggs
1/2 c. sugar
2 tsp. ground cinnamon
In bowl, combine 7 cups flour, yeast, salt and 1/2 cup sugar. In a separate bowl, heat milk and shortening. Beat eggs, and add along with milk and shortening to flour mixture. Add remaining flour as needed to be able to work dough. Knead for approx. 5 minutes. Place in greased bowl, and let rise until double. Punch down. Let reast 10 minutes. Roll out, brush with water. Combine 2 tsp. cinnamon with 1/2 cup sugar; sprinkle on. Roll up and cut into rolls. Let rise and bake at 375 degrees for approx. 20 minutes. Ice with frosting.
Tip: Freeze these after making into rolls, instead of letting them rise. Get out of freezer Saturday night. Let stand on counter overnight and bake the next morning.
