Recipe of the Week

Lil Snickers Cheesecakes (from Ashley Graber)

 

Line a muffin tin with cupcake liners. Twist open a sandwich cookie (such as an Oreo) and place one half, cream side up, in each liner. In your mixer, cream 24 oz. (3 bricks) of cream cheese until fluffy. Add 14 oz. sweetened condensed milk, 3 large eggs and 1 Tbsp. vanilla and mix well. Fill each muffin liner 3/4 full with the cream cheese mixture. Cut a fun size snickers into three pieces. Press one piece into the cheesecake mixture, and do this for all. Bake at 300 degrees for 30-35 minutes. Set aside to cool.

 

When all cheesecakes are cool, make the praline glaze:

Bring to a boil 1/2 cup whipping cream and 1/2 cup brown sugar. Add four chopped fun-size Snicker bars. Stir until chocolate is melted and boil for 1 minute. Spoon a little glaze over each cheesecake and chill until set.
